From my aunt Virgina’s kitchen…
Cream together:
2 Tablespoons butter
1/2 cup sugar
1/2 cup milk
?? Vanilla
Sift together:
1 1/2 teaspoons baking powder
1 cup plain flour
1/2 teaspoon salt
Add Sifted mixture to Creamed mixture to make batter
Pour into greased casserole
Pour 1 1/2 cups berries of your choice over batter
Sprinkle 1 cup white or brown sugar over berries
Pour 1 cup water over all [don’t worry]…
Bake at 350 degrees for about 45 minutes
Can use canned fruit or fresh (If canned then use juice in place of water)
Its is great all by itself – hot and fresh or chilled – even room temp – it is vegan afterall – leave it sit out (covered) BUT I like it best with a scoop of vanilla gelato or ice cream…
